Fudgy, Chewy, Cakey Brownies

Fudgy, Chewy, Cakey Brownies

2/3 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
2 ounces unsweetened chocolate
4 ounces bittersweet or semi-sweet chocolate
10 tablespoons unsalted butter
1 1/4 cups granulated sugar
2 teaspoons vanilla
3 large eggs

Preheat oven to 325.
Line an 8-inch square baking pan with foil - this will allow you easily remove the brownies from the pan to cool before cutting.
Lightly grease the foil.
Whisk flour, salt, and baking powder in a bowl; set aside.
Melt unsweetened chocolate, bittersweet or semi-sweet chocolate, and butter in a bowl set over a pan of simmering water. Remove from heat and whisk is sugar and vanilla.
Whisk eggs into chocolate mixture, one at a time, fully incorporating each one before adding the next.
Continue to whisk until mixture appears smooth and glossy.
Add flour mixture to chocolate mixture, whisking just until incorporated.
Pour batter into prepared pan and bake at 325 for 35-45 minutes - until a toothpick inserted in the center comes out with wet crumbs.
Cool brownies in the pan for 5 minutes.
Use the foil to remove brownies from the pan, and cool completely before cutting into squares and serving.
