Banana Coconut Muffins

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 large ripe bananas, mashed
1/4 cup butter, melted
1/4 cup unsweetened applesauce
1/2 cup granulated sugar
1 large egg
1/2 teaspoon vanilla
3/4 cup shredded coconut, divided
Preheat oven to 375.
Whisk flour, baking powder, and salt together in a bowl.
In a separate bowl, whisk together bananas, butter, applesauce, sugar, egg, vanilla, and 1/2 cup coconut.
Fold flour mixture into banana mixture, stirring just until moistened.
Divide batter among 10 greased or lined muffin cups and sprinkle with remaining 1/4 cup coconut.
Bake at 375 until a toothpick inserted in the center of a muffin comes out clean - about 20 minutes.
