Bow Ties with Sausage, Tomatoes, and Cream

12 ounces bow tie pasta
2 teaspoons olive oil
3 Italian sausage links, casings removed and crumbled
1/2 teaspoon red pepper flakes
1/2 cup onion, chopped
3 cloves garlic, minced
28 ounces diced Italian tomatoes, drained
1 1/2 cups heavy cream (or use a combination of cream and half-and-half - I generally use 1 c. cream, 1/2 c. half-and-half)
1/2 teaspoon salt
3 tablespoons fresh parsley, minced

Cook pasta according to package directions; drain and rinse.

Heat oil in a large skillet over medium heat.
Cook sausage and pepper flakes until sausage is evenly brown.
Stir in onion and garlic, and cook until onion is tender.
Stir in tomatoes, cream, and salt. Simmer until mixture thickens, 8 to 10 minutes.

Stir cooked pasta into sauce, and heat through. Sprinkle with parsley.
