Sautéed Kale


Sautéed Kale

1 pound kale, stems and center ribs removed, leaves cut into 1-inch strips (about 8 cups)
1 tablespoon olive oil
1/3 cup onion, diced
1 garlic clove, minced
1/8 teaspoon crushed red pepper flakes
1 tablespoon red wine vinegar
1/4 teaspoon salt

Cook kale in boiling water, stirring occasionally, until tender - about 10 minutes. Drain.
Heat olive oil in a skillet over medium-high heat.
Add onion to skillet and sauté until softened - 6-8 minutes.
Add garlic and red pepper flakes and cook 1 minute.
Reduce heat to medium, add kale, and cook, stirring occasionally, until heated through- about 2 minutes.
Remove from heat and stir in vinegar and salt.
