Zucchini Spice Cake

for the cake:
1 cup brown sugar, packed
6 tablespoons unsalted butter, softened
3/4 teaspoon vanilla
1 large egg
1 large egg white
1 1/2 cups all-purpose flour
1 1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
3/4 teaspoon ground cloves
1 1/2 cups zucchini, peeled and shredded (about 1 large or 2 small zucchinis)
for the frosting:
1 cup and 2 tablespoons powdered sugar
1 1/2 tablespoons unsalted butter, softened
1/4 teaspoon ground cloves
5 teaspoons milk
to make the cake:
Preheat oven to 350.
Using an electric mixer, beat brown sugar, butter, vanilla, egg, and egg white in a large bowl until smooth.
Stir in flour, baking soda, cinnamon, and cloves until just combined.
Stir in zucchini.
Bake at 350 for 30 minutes, or until a toothpick inserted in the center comes out clean.
Cool completely before frosting.
to make the frosting:
Beat powdered sugar, butter, cloves, and milk with an electric mixer until smooth and spreadable.
Frost cake when cool.
