Breakfast Couscous

Breakfast Couscous

1/4 cup water
1 cup milk
1/2 cup uncooked couscous
1/4 cup dried cranberries
1/4 cup raisins
1/4 slivered almonds
1 tablespoon brown sugar
1/2 teaspoon cinnamon, plus extra for sprinkling
1/8 teaspoon salt

Combine milk and water in microwave-safe container. Microwave for 3 minutes. (Alternately, heat milk in a pan on the stovetop).
Add couscous, cranberries, raisins, almonds, brown sugar, cinnamon, and salt and stir to combine. Cover with a tight-fitting lid and let stand for 10 minutes, or until liquid is absorbed.
Sprinkle with additional cinnamon, if desired.
Can be served hot or cold.

makes 3 3/4 cup servings
