Corn and Smoked Mozzarella Mashed Potatoes


Corn and Smoked Mozzarella Mashed Potatoes

3 cups corn kernels
2 1/2 pounds red potatoes, quartered
3/4 cup milk
2 ounces (1/2 cup) smoked mozzarella, shredded (if you can't find smoked mozzarella, other smoked cheeses work well, such as smoked gouda)
3 tablespoons butter, softened
1 tablespoon lime juice
3/4 teaspoon salt
1/2 teaspoon pepper

Saute corn in a large skillet over medium-high heat for 5 minutes, or until lightly browned. Set aside.
Place potatoes in a saucepan and cover with water. Bring to a boil. Reduce heat and simmer 20-25 minutes, or until potatoes are tender.
Drain and return potatoes to pan. Add milk, cheese, and butter; mash to desired consistency.
Cook 2 minutes, or until thoroughly heated, stirring constantly.
Add corn, lime juice, salt, and pepper, stirring to combine.
