Honey Peanut Butter Banana Muffins



Honey Peanut Butter Banana Muffins

1/4 cup honey
2/3 cup milk
1/2 cup peanut butter
1 large ripe banana, mashed
4 egg whites
1 teaspoon vanilla
1 1/3 cups all-purpose flour
1/3 cup cooked oatmeal (cooked with water only)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon cinnamon

Preheat oven to 400.
Combine and mix thoroughly honey, milk, peanut butter, banana, egg whites, and vanilla.
In a separate bowl, combine flour, cooked oatmeal, baking powder, baking soda, and cinnamon.
Stir dry ingredients into honey mixture; mix just until moistened.
Pour into batter into muffin cups coated with cooking spray or lined with foil liners.
Bake at 400 for 18-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

in kc - HUs stand for "Healthy Units" which are the same things as "points" for people who use Weight Watchers. The word "points" is copyrighted, so other phrases have been coined to share recipes with those who follow the WW plan. If you're not doing Weight Watchers, the HUs listed on my recipes shouldn't matter. Hope that helps! Thanks for stopping by!
