Vegetables and Rice with Peanut Sauce

2 tablespoons peanut butter
1 tablespoon soy sauce
1 1/2 teaspoons honey
1 tablespoon water
2 teaspoons olive oil
2 garlic cloves, minced
3 cups cooked brown rice
1 ounce cashews

2-3 cups of any vegetable combination that appeals to you - for this photo I used:
1/2 cup carrots, thinly sliced
1/4 cup onion, chopped
1/2 cup corn
1/2 cup red bell pepper, chopped
1/2 cup bean sprouts

Combine peanut butter, soy sauce, honey, and 1 tablespoon of water in a small bowl.
In a large skillet, heat oil over medium heat. Add carrots and onion (or any of your vegetables that require a slightly longer cooking time) – cook until onion is translucent, about 2 minutes.
Add remaining corn, pepper, sprouts (any of your vegetables that require a shorter cooking time), and garlic. Cook, stirring frequently, until vegetables are tender-crisp, about 3 minutes.
Add peanut butter mixture and cook, stirring constantly, until just boiling, about 2 minutes.
Stir in rice and cook until heated through, about 2 minutes.
Top with cashews.

i tried the recipe and the sauce turned out great. I made a substituion... instead of rice, i used homemade wheat noodles.

Everyone just loved it!
