
Dark Chocolate Pudding

3 tablespoons cornstarch
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
2 cups skim milk
1 teaspoon vanilla
raisins (optional)
In a saucepan, thoroughly combine cornstarch, sugar, and cocoa powder.
Add milk and stir until very smooth.
Cook over medium heat, stirring constantly, until pudding comes to a boil.
Lower the heat and gently simmer, stirring continuously, for 3-4 minutes.
Stir in the vanilla.
Stir in raisins, if using.
Pour pudding into individual serving dishes and serve warm, or chill for 2 hours until set and serve cold.
makes 4 servings, 2 WWP per serving.
