Tzatziki (Greek Yogurt and Cucumber Dip)


Tzatziki (Greek Cucumber and Yogurt Dip)

1 1/2 cups Greek-style plain yogurt
1/2 medium-sized cucumber, peeled, seeded, and finely chopped
3 tablespoons fresh dill, chopped
1 teaspoon lemon juice
2 cloves garlic, minced
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1/2 teaspoon kosher salt

Stir together all ingredients in a large bowl (alternately, if you don't want your sauce to be chunky, you can process all ingredients until smooth in a food processor or blender).
Serve as a condiment on burgers or vegetable sandwiches, as a dip for vegetables, chips, pita bread, or meatballs...or any other way you can imagine!

makes 7 1/4 cup servings, 1 HU per serving.
