Sweet Potatoes (Hold the Marshmallows) to Please Every Palate

Streuseled Sweet Potato Casserole

I love sweet potatoes all fall and winter long - baked sweet potatoes, mashed sweet potatoes, sweet potatoes in soup, sweet potatoes both sweet and savory...you see, I could almost write a poem detailing my affection for sweet potatoes! This particular sweet potato recipe, however, is my favorite of all my favorites - the best of the best. I'm not a big fan of the sweet potato-marshmallow concoctions that grace many a table at this time of year, and this recipe is the closest I'll come to a sweet potato dish along those lines . Mashed sweet potatoes are whipped with cream, maple syrup, and vanilla to make an airy, creamy mixture that's spread into a pan, topped with a streusel of chopped pecans, brown sugar, and butter, then baked to warm, heavenly perfection. It's a holiday side dish that will make everyone happy: if you've got people who can't stand the thought of a sweet potato-marshmallow casserole, then they'll be pleased to have this delicious alternative...and if you've got people who will be disappointed that you didn't use any marshmallows in your holiday meal, I'll bet they'd be pleasantly surprised to taste these potatoes and find that they're just as good - if not better - than what they're normally used to. I hope everyone had a lovely holiday this week...now to start planning for New Year's!
