Crustless Spinach and Turkey Quiche


Crustless Spinach and Turkey Quiche

4 ounces cooked turkey (or ham, chicken, etc.) (omit if making vegetarian quiche)
1/2 cup onion, chopped
pinch of black pepper
3 ounces Swiss cheese, shredded and divided (about 3/4 cup)
1 cup baby spinach
1 cup cottage cheese
1/2 cup evaporated milk
1 ounce cheddar cheese, shredded (about 1/4 cup)
2 large eggs
2 large egg whites
1/2 cup all-purpose flour
1 teaspoon baking powder

Preheat oven to 350.
Saute turkey (if using), onions, and black pepper in a skillet over medium heat until turkey is slightly browned and onions start to soften - about 4 minutes.
Grease a 9-inch pie plate, then sprinkle the bottom with 1/4 cup of the shredded Swiss cheese.
Sprinkle turkey and onions over cheese.
In a bowl, whisk together remaining Swiss cheese, spinach, cottage cheese, milk, cheddar, eggs, and egg whites until thoroughly combined.
In a separate bowl, whisk together flour and baking powder.
Add flour mixture to egg mixture, whisking just until blended.
Pour egg mixture into pie plate.
Bake at 350 for 45 minutes, or until a toothpick inserted in the center of the quiche comes out clean.
