Citrus-Herb Salmon

Citrus Herb Salmon

1 1/2 pounds salmon fillets
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon zest
1 1/2 teaspoons orange zest
fresh chives*
thyme sprigs*
oregano sprigs*
tarragon sprigs*
1 lemon, thinly sliced (it's okay to use the same lemon you grated for zest)

*enough of each herb to cover the surface of your salmon - usually about 5 of each is plenty)

Preheat oven to 400.
Line a shallow pan with foil that has been coated with oil or cooking spray to prevent sticking.
Sprinkle salmon with salt and pepper.
Combine lemon and orange zests in a small bowl; rub over surface of salmon.
Lay herbs across salmon.
Layer lemon slices over herbs.
Lay another sheet of foil on top of salmon and fold the two sheets together to form a packet.
Bake at 400 until salmon flakes easily with a fork - about 12 minutes, depending on thickness.
