1 teaspoon olive oil
1 garlic clove, minced
3/4 cup white rice (I like jasmine or basmati best)
1/2 cup coconut milk
1 cup water
1 teaspoon kosher salt
2 teaspoons lime juice
1/4 cilantro, chopped (optional)
Heat olive oil in a saucepan over medium heat.
Add garlic and saute for 30 seconds.
Add rice, stirring to coat with oil, and saute for 1 minute.
Add coconut milk, water, and salt.
Bring to a boil, then reduce heat and simmer for 20 minutes, or until liquid is mostly absorbed.
Remove from heat and add lime juice and cilantro.
Cover and let stand for 10 minutes.
makes 4 1/2-cup servings
