Morning Glory Muffins


Morning Glory Muffins

1 cup whole wheat flour
1/2 cup all-purpose flour
1 cup rolled oats
3/4 cup brown sugar, packed
1 tablespoon wheat bran
2 teaspoons baking soda
1/4 teaspoon salt
1 cup plain yogurt
2 medium ripe bananas, mashed
1 large egg
1/2 cup dried apricots, chopped*
1/2 cup dried pineapple or mango, chopped*
1/2 cup raisins*
2 tablespoons ground flax seed

*any 1 1/2 cup combination of dried fruit will work - experiment!

Preheat oven to 350.
Combine wheat flour, white flour, oats, brown sugar, wheat bran, baking soda, and salt in a bowl, stirring with a whisk. Make a well in the center of the ingredients.
In a separate bowl, combine yogurt,, bananas, and egg. Add to the well in the flour mixture, stir just until combined.
Fold in dried fruit.
Divide batter into 12 muffin cups coated with cooking spray or lined with paper liners.
Sprinkle evenly with flax.
Bake at 350 for 20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
