Rise and Shine

Morning Glory Muffins

I have to admit, I'm not really a morning person. I'd much rather stay up late at night - finishing a good book or spending time with a good friend - than get up at sunrise for pretty much any reason. Sadly for me, this preference really conflicts with my line of work- we have kids and teachers at the center at 7:00 a.m. sharp, which means that I'm up at 5:00 most mornings in order to be ready to meet them there. One thing that helps me hop out of bed when I'm feeling reluctant to do so is knowing that I have something really good waiting for me for breakfast...like these muffins. They are the most excited I've been about breakfast in a while: they have a hearty, healthy taste that's particularly satisfying early in the morning. Packed with fruits and nutritious stuff like wheat bran and ground flax, they still manage to taste pretty darn good - nothing like the dry cardboard taste I often associate with "healthy" baked goods. They'll keep well on your counter for a few days, and they'll make an excellent candidate for the freezer after that...and maybe, just maybe they'll motivate you to get out of bed on those mornings when you can't possibly fathom doing so.
