Golden Tofu Triangles with Rich Peanut Sauce

32 ounces extra-firm tofu
1 tablespoon olive oil
3/4 cup peanut butter
3 tablespoons soy sauce
2 1/2 tablespoons lime juice
2 tablespoons sugar
2 teaspoons fresh ginger, grated
1/2 teaspoon red curry paste
1/2 cup water

Heat olive oil in a skillet over medium-high heat.
Cut each block of tofu into 16 small triangles (with two blocks of tofu, you should have 32 triangles total).
Add the tofu and cook, turning occasionally, until golden on both sides - about 12 minutes.
To prepare the sauce, whisk together the peanut butter, soy sauce, lime juice, sugar, ginger, curry paste, and water in a small saucepan.
Heat the sauce until just boiling, then reduce heat to low and cook for 2 minutes.
Serve tofu and sauce over noodles or rice.

makes 8 servings, 6 HUs per serving (not including rice or noodles)
