Thai Fruit Salsa
Thai Fruit Salsa

1 cup peeled and finely chopped cantaloupe
1 cup peeled and finely chopped mango
1 cup thinly sliced strawberries
1/2 cup peeled, seeded, and finely chopped cucumber
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red onion
1 1/2 tablespoons chopped fresh mint
1 tablespoon chopped fresh basil
2 tablespoons lime juice
2 tablespoons seeded and finely chopped jalapeƱo pepper
1 tablespoon honey
1/4 teaspoon salt
Combine all ingredients in a bowl. Toss thoroughly.
makes 6 medium servings, 1 HU per serving.
