Mexican Meatballs
Mexican Meatballs

2 teaspoons olive oil
1 medium onion, minced
2 cloves garlic, minced
1/2 medium jalapeno pepper, seeded and minced
1 pound ground pork
1/2 cup dry bread crumbs
1 large egg
2 teaspoons kosher salt
1/4 teaspoon black pepper
1/2 teaspoon ground cumin
2 cups tomato salsa
Preheat oven to 400.
Heat 1 teaspoon of olive oil in a large, oven-proof skillet** over medium heat.
Add the onion and cook 3 minutes, until softened.
Add the garlic and jalapeno and cook 1 minute.
Remove from heat and let cool.
In a large bowl, combine the pork, bread crumbs, egg, salt, pepper, cumin, and onion mixture.
Shape into 12 large meatballs.
Wipe out the skillet, then add the remaining 1 teaspoon of olive oil and heat to medium-high.
Brown the meatballs on all sides - about 7 minutes total.
Pour the salsa over the top of the meatballs.
Bake at 400 until cooked through, about 25 minutes.
**if you don't have an oven-proof skillet, simply transfer the meatballs and salsa to a baking dish after simmering them on the stovetop.
makes 4 servings, 10 HUs per serving.
