Barbecue Roasted Salmon


Barbecue Roasted Salmon

1/4 cup pineapple juice
2 tablespoons lemon juice
24 ounces salmon
2 tablespoons brown sugar
4 teaspoons chili powder
2 teaspoons lemon zest
3/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon cinnamon
lemon wedges (optional)

Combine pineapple juice, lemon juice, and salmon in a large zip-top bag. Marinate 1 hour in the refrigerator, turning occasionally.
Preheat oven to 400.
Remove fish from bag and discard marinade.
Combine brown sugar, chili powder, lemon zest, cumin, salt, and cinnamon in a small bowl.
Rub spice mixture over fish (it will look like a lot, but use it all).
Place fish in a baking dish or broiler pan lined with foil.
Bake at 400 for 12 minutes, or until salmon flakes easily with a fork.
Serve with lemon wedges, if desired.
