Basil Shrimp with Feta and Orzo


Basil Shrimp with Feta and Orzo

1/2 cup uncooked orzo
1 teaspoon olive oil
1 cup diced tomato (fresh or canned, drained)
3/4 cup sliced green onions
1/2 cup (2 ounces) crumbled feta cheese
1/2 teaspoon grated lemon rind
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
3/4 pound large shrimp, peeled and deveined
1/4 cup chopped fresh basil

Preheat oven to 450.
Line a baking dish with foil (or use a foil oven bag and skip the baking dish); coat foil with cooking spray.
Cook the orzo in boiling water for 5 minutes; drain.
Place the orzo in a large bowl. Stir in olive oil, tomato, green onions, feta, lemon rind, lemon juice, salt and pepper.
Spread the orzo mixture evenly over foil.
Combine shrimp and basil. Arrange shrimp mixture on top of orzo.
Place another sheet of foil over the the top of the orzo and shrimp. Crimp edges of foil sheets to together to form a packet (skip this step if you're using an oven bag).
Bake at 450° for 25 minutes or until the shrimp are done.
Open foil packet and serve.

makes 2 large servings or 3 small servings
