Miniature Vegetable Quiches

Miniature Vegetable Quiches

5 eggs
5 egg whites
10 ounces spinach, chopped (fresh or frozen, thawed and drained)
1/2 cup bell peppers, chopped
1/2 cup onions, chopped
1 cup cheddar cheese, shredded
salt and pepper to taste

Preheat oven to 350.
Line muffin tin with foil baking cups, or spray with cooking spray.
Beat the eggs and egg whites together in a bowl.
Stir in spinach, peppers, onions, and cheese.
Season with salt and pepper to taste.
Fill muffin cups with egg mixture.
Bake at 350 for 35 minutes, or until a toothpick inserted in the center comes out clean.
