Vegetables to Start Your Day

Miniature Vegetable Quiches

Here's another of my favorite variations on mini quiche cups! These are a nice, savory alternative to sweeter baked goods, like muffins or scones, for breakfast. And, if you're like me and one of your goals is to fit more vegetable servings into your day, these quiches are a great way to do it. I used a combination of spinach, bell peppers, and onions when I made these last - but almost any vegetable combination that appeals to you will work. These are just as good reheated as they are fresh out of the oven, so they're a good option for "on the go" weekday breakfasts.
