White Chocolate Raspberry Bars

White Chocolate Raspberry Bars

(I talked about this recipe here)

3/4 cup butter
3 cups white chocolate chips, divided
3 large eggs
3/4 cup granulated sugar
1 1/2 cups all-purpose flour
3/4 teaspoon salt
3/4 teaspoon almond extract
3/4 cup raspberry jam
6 tablespoons sliced almonds, toasted

Preheat oven to 325.
Spray a 9x13 inch baking pan with cooking spray, or line with parchment paper.
Melt butter on the stovetop or in the microwave; stir. Add 1 1/2 cups white chocolate chips and let stand.
Beat eggs in a large bowl until foamy. Add sugar and beat until light lemon-colored, about 5 minutes.
Stir in chocolate chip-butter mixture.
Add flour, salt, and almond extract; mix at low speed until combined.
Spread 2/3 of batter into prepared pan.
Bake at 325 for 20 minutes, until light golden brown around edges. Remove from oven.
Spread jam over warm crust.
Stir remaining white chocolate chips into the remaining batter. Drop spoonfuls of batter over jam.
Sprinkle with toasted almonds.
Return to oven and bake at 325 for 30 minutes, or until edges are browned.
Cool completely in pan.
Cut into bars.
