A spicy Chinese chicken salad...

I tried Bobby Flay's recipe for Chinese Chicken Salad with Red Chile Peanut Dressing for the first time last week. It was great - the dressing was nice and spicy, and it's one of very few salads that I've been able to convince DR to try! Big thumbs up from both of us!

I tried using a bagged coleslaw mix to save time chopping cabbage and lettuce, and I don't think I would do that again - something about it tasted "not so fresh" to me. Lime wedges to squeeze over it, as well as the chopped peanuts, add something a little extra and make it that much better - I wouldn't recommend skipping either ingredient.
