Baked spaghetti - comfort food on a chilly fall day...

Spaghetti Pie

There's almost nothing more comforting than a baked pasta dish on a wet, chilly day. Last week it rained around here a lot, and my older sister Christine's recipe for Spaghetti Pie seemed like just the thing to make. It's her version of a baked spaghetti they make at a restaurant in Minneapolis that she and her husband used to love when they lived here, and it's fabulous! Simple to throw together, and very filling in that casserole-ish sort of way. I make it vegetarian, but ground beef or turkey could be added if you wanted a meat sauce with it.

i just passed this recipe on to a friend. it is one of our families favorites - perfect for vegetarians and for company as it is sooo easy to make and can be done ahead of time and popped in to the oven at the end. my husband joe suggested that some extra sauce served in a pitcher would be nice for those (like himself) who enjoy it "saucier"!
