Creamy, decadent bars...

Rhubarb-Custard Bars

These bars are one of my favorite desserts in the world! I know rhubarb season is over, but if you grew it in your garden this year, maybe you froze some - you can also buy frozen rhubarb at many grocery stores. If you can't find any frozen rhubarb, this recipe is worth saving to make next year. My slightly blurry photo doesn't capture it too well (sorry about that), but these bars consist of a buttery crust, topped with a layer of rich rhubarb custard, finished with...CREAM CHEESE FROSTING. It just doesn't get any better than that, my friends.

I have tried these rhubarb bars and
they may be the best dessert of all. just be sure you are having guests when you make them so that you, yourself, do not eat them all!

Yes, make sure you have LOTS of guests. The last time I made these, I had over half a pan left over when my (2) guests left for the evening. Dariush doesn't get too excited about desserts that don't involve chocolate, so he never eats these. So, guess who managed to finish them off? Yup. In less than a week. By myself. Quite an accomplishment, eh?
