Berries and cream

Raspberry Cream Muffins

Anything that involves berries and cream of any sort makes me happy, and these muffins are no exception. They make me especially happy because you can use frozen berries in them, and that's fantastic news, because I don't buy fresh berries in the winter. So, while I baked them for treats for my staff just before Thanksgiving, I also baked them for myself and called them my "extra special breakfast treat" for about a week. And let me tell you, I was very happy to wake up and eat these every morning. They remind me of eating raspberries on vanilla ice cream, which is one of my absolute favorite desserts of all time. The recipe calls for raspberries, but I imagine any berry would work...blueberries, strawberries, and blackberries all sound great to me. Oh, the possibilities...

These are EXCELLENT!! I love them with raspberries, but I may have to try them with blueberries, too!

Kelly, I think blueberries are a great idea! I made them with "mixed" berries while I was staying with my sister (blackberries, strawberries, and raspberries, I think) and they were good that way too. :)
