Cider Roasted Pork Loin

One of my favorite meals growing up was pork chops with applesauce - simple, plain, and wonderful. This recipe reminds me of that meal...simply seasoned with sage and rosemary, brined and basted with apple cider, this pork loin is one of those classic dishes that tastes good to just about everyone - even those who are less adventurous eaters. You have to plan a bit ahead for this one, since the brining takes a while - I just toss it in a bag with the brine before I leave for work in the morning, and it's ready to be roasted by the time I get home again. It's a great company recipe too, because it has "safe" flavors that most people enjoy - served with some roasted vegetables or potatoes, it's a perfect winter meal.
