Comfort Food for a Chilly Weekend...

Chicken Noodle Casserole

It has been unbelievably cold in Minnesota this weekend! So cold that I've been pretty much holed inside of my house all weekend long, cooking, reading, and staying warm. I have to say I can't complain too much - those of you who know me already know that I love nothing more than staying home, and it's nice to have a built-in excuse like the weather to do it! If you're hiding out in your house on a chilly day - or just craving creamy comfort food - this casserole recipe is perfect for you. Its simple flavors are reminiscent of those "cream of whatever" soup dishes many people remember from childhood without having to actually use a can of one of those soups, and it's warm, creamy quality makes it perfect comfort food. Thanks to my friend Nicol for letting me use her camera to take the beautiful picture you see above! :)

OK, I've looked and looked at the photo and I can't figure it out. Is the noodle casserole to the left? It looks like a piece of focaccia. I'm not criticizing, just wondering.

Tracy - yup, the casserole is to the left. If you click on the photo and enlarge it I think you can see it better...the yellow pieces are the baked egg noodles, and you can see some pieces of chicken too. It stays in a pretty nice square like that until you break it up with a fork!
