Happy Birthday, Kelly!

Classic Angel Food Cake

It was my business partner and good friend Kelly's birthday earlier this month, and angel food with strawberries and whipped cream is her favorite dessert, so happily, I can now add this cake to my repertoire of birthday treats. In the past when I've wanted angel food cake, I've just bought it from a bakery and been perfectly happy - for some reason the idea of making it from scratch has always intimidated me. Fortunately (for me and everyone at work), this cake was not nearly as difficult to put together as I thought it would be, and was the perfect spring dessert with a handful of sliced strawberries and a dollop of whipped cream - light and airy with a subtle flavor from the almond extract in the batter. With the additional advantage of being lower in fat and calories than most of the desserts I make, I have a feeling angel food cake is something that will be making an appearance in my kitchen often this summer.

As I mentioned above, Kelly is my business partner and close friend - she does so much for other people, so I was thrilled to be able to do something for her on her birthday. Without her, I wouldn't have had the amazing opportunity to own and direct our own center - there's been lots of ups and downs in the last six months, but it feels like things are starting to settle a bit and we're finding a comfortable pace for ourselves. So...happy birthday, Kelly - you have so many accomplishments to be proud of this year! I'm so glad you're a part of my life. Thanks for picking such a delicious cake for your birthday - and thanks to the always fabulous Nicol for the wonderful pictures!

Anna, it is really great for the summer - I'll have to make it for a date night sometime soon!
