Rosemary Roasted Cashews
(I talked about this recipe here)
1 pound unsalted cashews (if you can't find unsalted cashews, salted is okay - just omit the additional salt in the recipe)
2 tablespoons fresh rosemary, chopped
1/2 teaspoon cayenne pepper
2 teaspoons brown sugar
2 teaspoons kosher salt
1 tablespoon unsalted butter, melted
Preheat the oven to 375 degrees.
Spread the cashews in a single layer on a baking sheet.
Roast the cashews at 375 for 10 minutes.
Combine the rosemary, cayenne, sugar, salt and butter in a large bowl.
Toss the roasted cashews with the rosemary mixture until evenly coated.
makes about 3 cups
