Outrageous Oreo Crunch Brownies

1/2 pound (2 sticks) unsalted butter
8 ounces bittersweet chocolate, cut into chunks
3 ounces unsweetened chocolate, cut into chunks
3 large eggs
1 tablespoon espresso powder
1 tablespoon vanilla
1 cup plus 2 tablespoons granulated sugar
1 cup plus 2 tablespoons cups all-purpose flour, divided
1/2 tablespoon baking powder
1/2 teaspoon salt
2 cups Oreo cookies, halved (about 25 Oreos)

Preheat oven to 350.
Line a 9x13 pan with foil.
In a heatproof bowl set over a saucepan of simmering water, heat butter, bittersweet chocolate, and unsweetened chocolate until melted and smooth. Cool slightly.
In a large bowl, whisk eggs, espresso, vanilla, and sugar.
Blend chocolate mixture into egg mixture and cool to room temperature.
In a medium bowl, sift together 1 cup of flour, baking powder, and salt.
Add flour mixture to chocolate mixture.
In a small bowl, toss Oreos with remaining 2 tablespoons of flour.
Add Oreo mixture to chocolate mixture and gently fold to combine.
Pour batter into foil-lined pan and smooth top with a spatula.
Bake at 350 for 35 minutes, or until a toothpick inserted in the center comes out clean. Do not overbake.
Cool the brownies to room temperature, then refrigerate until cold before cutting them (I refrigerate overnight). Chilling them will ensure clean, even cuts.

Ohmy look at that! Im afraid Id need to take too much insulin to really enjoy them, but they are going to be made at some point! Thanks for the sin on a plate!LOL
