Slow Cooker Thai Chicken

8 chicken thighs
3/4 cup salsa
1/4 cup peanut butter
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon grated ginger
1/4 cup cilantro, chopped (optional)
1/4 cup peanuts, chopped (optional)
rice (for serving)
Place chicken in crockpot.
Pour salsa, peanut butter, lime juice, soy sauce, and ginger over chicken, stirring to combine.
Cook for 8 hours on low setting.
Sprinkle with cilantro and peanuts (if using) before serving.
Serve over rice.
