Baked Fish Casserole


Baked Fish Casserole

1 tablespoon olive oil, divided
1 1/2 cups onion, thinly sliced
3/4 cup white wine
1 pound cod (or other lean white fish), cut into chunks
2 teaspoons fresh thyme, chopped
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
3 slices white or wheat bread, torn into pieces
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1 cup Swiss or Gruyere cheese, shredded

Preheat oven to 400.
Heat 1/2 tablespoon olive oil in a skillet over medium-high heat.
Add onions and cook, stirring often, until just starting soften, 5-7 minutes.
Add wine and increase heat to high.
Cook, stirring often, until wine is slightly reduced, 3-4 minutes.
Transfer onion mixture to a baking dish that has been coated with cooking spray.
Arrange fish pieces on top of the onions and sprinkle with thyme, salt, and pepper.
Cover the dish and bake for 12 minutes.
Toss the bread pieces with the remaining 1/2 tablespoon of olive oil, paprika, and garlic powder.
Sprinkle the bread mixture over the fish.
Sprinkle the shredded cheese over the bread.
Bake, uncovered, until the fish is opaque in the center, about 10 minutes.

makes 4 servings, 8 HUs per serving.
