Spinach Artichoke Dip


Spinach Artichoke Dip

2 cups shredded mozzarella cheese, divided
1/2 cup sour cream
1/4 cup Parmesan cheese, divided
1/4 teaspoon black pepper
3 garlic cloves, minced
14 ounces artichoke hearts, drained and chopped
16 ounces cream cheese, softened
10 ounces frozen chopped spinach, thawed, drained, and squeezed dry

Preheat oven to 350.
Combine 1 1/2 cups mozzarella, sour cream, 2 tablespoons Parmesan, pepper, garlic, artichoke hearts, cream cheese, and spinach in a large bowl and stir until well blended.
Spoon mixture into a baking dish coated with cooking spray.
Sprinkle with remaining 1/2 cup mozzarella and 2 tablespoons Parmesan.
Bake at 350 until bubbly and golden brown, about 30 minutes.
Serve with baguette or other crusty bread, chips, crackers, or vegetables.

makes 20 small servings, 2 HUs per serving.
