Chewy Granola Bars
Chewy Granola Bars

1/2 cup honey
1/2 cup brown sugar
2/3 cup smooth peanut butter
2 2/3 cups rolled oats
1 cup whole wheat flour
1 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
1/3 cup wheat germ
1/3 cup raisins*
1/3 cup shredded coconut*
1/2 cup peanuts*
1/2 cup chocolate chips*
*other ingredients can be substituted for these items (dried fruit, nuts, peanut butter or carob chips, etc.)
Preheat oven to 350.
Warm honey in the microwave for about 20 seconds to allow it mix better with other ingredients.
Mix together honey and peanut butter in a large bowl.
Stir in all other ingredients.
If mixture seems too dry, add water 1 tablespoon at a time. If it seems to sticky, add more oats, 1 tablespoon at a time.
Press mixture into a 9x13 pan coated with cooking spray.
Bake at 350 for about 20 minutes, or until bars are barely browned. Be careful not to overbake.
Cut into bars while still warm, but leave in pan until cool.
When completely cool, remove from pan.
makes 16 bars, 6 HUs per bar
