Double Chocolate Cherry Cookies


Double Chocolate Cherry Cookies

1 1/2 cups all-purpose flour
3/4 cup cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
1 large egg
1 teaspoon vanilla
1/2 cup dry red wine
10 ounces dark chocolate, cut into chunks
1 cup dried cherries

Preheat oven to 375.
Combine flour, cocoa powder, salt, and baking soda in a bowl.
In a separate bowl, cream butter and both sugars with an electric mixer on low speed until fluffy.
Add egg, vanilla, and wine to the butter and sugar mixture and beat with the mixer until combined.
Add the flour mixture in small batches to the butter and sugar mixture, beating with the mixer after each addition.
Fold in the cherries and chocolate chunks.
Divide the dough into heaping tablespoons on a cookie sheet.
Bake at 375 for 8-10 minutes; cookies may be soft in the center, but edges should be firm.
