Thai Ground Beef


Thai Ground Beef

1 teaspoon olive oil
1 cup onion, chopped
2 cloves garlic, minced
1 pound ground beef
1 teaspoon red curry paste
1 cup tomato sauce
1/2 cup coconut milk
1 tablespoon brown sugar
1/4 teaspoon lime zest
1 1/2 tablespoons lime juice
1 tablespoon fish sauce

Heat oil in a large skillet over medium-high heat.
Add onion and cook for 5 minutes.
Add garlic and cook for 1 minute.
Add beef, cook 7 minutes or until lightly browned, stirring frequently.
Stir in curry paste and tomato sauce. Cook 2 minutes, or until about half of the liquid evaporates.
Add coconut milk, brown sugar, lime zest, lime juice, and fish sauce. Cook 2 minutes more, until slightly thickened.
Serve with rice and wrap in tortillas or lettuce leaves, if desired.

makes 4 servings, 5 HUs per serving (beef only - not including rice or wraps).
