Instead of Getting Take-Out On Your Way Home...

Thai Ground Beef

...try this! Dariush and I have been loving this Thai-style recipe for a fast weeknight meal. There's not a lot of prep work (chopping ingredients and such) involved, and it's made in one skillet - two important features when you come home after a long day and just want to eat dinner without fussing too much. The bonus is that it's actually really good, which is more than I can say for a lot of other quick meals I throw together when I'm in a hurry. Lean ground beef is sauteed in tomato sauce, coconut milk, lime zest and juice, and curry paste, (among a few other things - but these are the ingredients that dominate the flavor of the dish) making the finished product tangy, sweet, and spicy all at once. We've been rolling it up with coconut rice and big leaves of lettuce to make wraps, but it's good with flour tortillas, too. If you ever cook Thai food, you probably already have all the ingredients to make this in your kitchen; if you've never tried cooking Thai food before, this is one of the easiest recipes I can think of to start with!
