Banana Orange Oat Muffins



Banana Orange Oat Muffins

1 1/2 cups rolled oats
1 cup all-purpose flour
1/3 cup brown sugar, packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup raisins
3/4 cup buttermilk
2 ripe bananas, mashed
2 egg whites
2 tablespoons unsweetened applesauce
1 1/2 teaspoons orange zest

Preheat oven to 400.
Grease 12 muffin cups.
In a large bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, salt and raisins.
In a separate bowl, mix buttermilk, bananas, egg whites, applesauce, and orange zest.
Combine wet ingredients with dry ingredients and stir just until moistened - do not overmix.
Fill muffin cups with batter.
Bake at 400 for 20 minutes, or until a toothpick inserted in the center comes out clean.
