Cranberry-Glazed Pork


Cranberry-Glazed Pork

1 cup fresh cranberries (or frozen - thawed)
1 cup apple, peeled and chopped (about 1 large apple)
2/3 cup brown sugar, packed
1/2 cup water
1/4 cup onion, chopped
1 tablespoon fresh ginger, peeled and minced
1 teaspoon curry powder
pinch ground red pepper
2 pounds pork tenderloin, trimmed
1/4 teaspoon salt
1/4 teaspoon pepper

Combine cranberries, apples, brown sugar, water, onion, ginger, curry powder, and red pepper in a small saucepan; bring to a boil.
Cover, reduce heat, and simmer 20 minutes.
Uncover and simmer 2 minutes, or until thick.
Cool 10 minutes.
Place sauce ingredients in a blender or food processor and process until smooth. Divide sauce in half.
Preheat oven to 350.
Sprinkle pork with salt and pepper.
Arrange pork on a broiler pan coated with cooking spray. Brush with half of cranberry sauce.
Bake at 350 for 30 minutes, or until a meat thermometer registers 160.
Serve pork with remaining cranberry sauce.
