Ham and Swiss Mini Quiche Cups

7 egg whites
4 whole eggs
1/2 cup 1% lowfat cottage cheese
1/2 cup Swiss cheese, grated
1/2 cup cooked ham, chopped
1/3 cup onions, chopped
salt and pepper to taste
Preheat oven to 350.
Line muffin pan with foil baking cups, or spray muffin cups with cooking spray.
Beat together eggs and egg whites in a medium bowl.
Fold in cottage cheese, Swiss cheese, ham, and onions.
Season with salt and pepper to taste.
Divide mixture evenly among muffin cups.
Bake at 350 for 25 minutes, or until a knife inserted in the middle comes out clean.
makes 12 mini quiches, 2 WWP per quiche.
