
Chocolate-Peanut Butter Cupcakes

1/4 cup light butter
4 ounces light cream cheese
1/4 cup reduced fat peanut butter
2 egg whites
1/4 teaspoon salt
2 teaspoons vanilla
3/4 teaspoon baking soda
1/3 cup unsweetened cocoa
1 tablespoon honey
1 cup all-purpose flour
1 cup brown sugar, packed
1/2 cup + 1 tablespoon skim milk
Preheat oven to 375. Line a muffin pan with 12 cupcake liners; set aside.
In a large bowl, combine flour, brown sugar, cocoa, baking soda, and salt.
In another bowl, combine butter, 1/3 cup milk, and egg whites.
Mix dry ingredients with wet ingredients until just moistened; set aside.
In another mixing bowl, combine cream cheese, peanut butter, honey, remaining milk, and vanilla.
Place 1 1/2 tablespoons chocolate batter into prepared muffin cups. Spoon a rounded teaspoon of peanut butter mixture into the center of each.
Fill cups with remaining chocolate batter.
Bake for 20 minutes at 375.
makes 12 cupcakes, 4 HUs per cupcake.
