A quick weekday breakfast...

I like to make big batches of breakfast items on Sunday afternoons, then eat them in the mornings throughout the week. These mini quiches turned out to be really filling (I had 2 every morning), and tasted great!

For those of you who are reading this and don't eat meat, these would be just as good without the ham - you could add more cheese and vegetables instead. I used LOTS of egg whites to lower the points value, and they tasted good that way - you could use whole eggs instead though. Substitute 1 whole egg for every 2 whites I've listed in the recipe.
