A delicious twist on chicken soup....

Lime Soup with Tortilla Strips and Chicken

I love soups of all kinds, and chicken soup is one of my favorites, especially when I'm not feeling well. This Mexican variation has LOTS of flavor and is pretty easy to throw together. The tortilla strips add a few extra calories and fat (not too many though), but they are well worth it - they make the soup a lot more fun!

Lime wedges placed in the bottom of the bowls just before eating are a must: the strong lime flavor can't really be achieved without them. The picture I've posted above is of Dariush's bowl of soup - he added chunks of avocado to his after I had served it. If you like avocado, it's a great addition, but the soup is fine without it, too.
