Spiced Pork with Bourbon Reduction Sauce
My mom and I had a Friday night date a couple weeks ago, and I made dinner. I gave her a few options for our menu, and she chose this pork recipe. It's a great "company" recipe because it's fairly easy to put together and has great presentation, in addition to lots of flavor. We ate this with roasted green beans and rice (and lots of wine).
The spice rub, in my opinion, is what really makes this recipe great, and I even like it plain without the reduction sauce. Try it without if you don't keep bourbon on hand or don't like the flavor of it - the sauce definitely has a strong bourbon flavor. If you do like bourbon, the extra sauce works well spooned over rice.
