A healthier falafel...

Baked Falafel

I've been looking at falafel recipes and experimenting a little to see what I like best. This recipe is what I finally came up with - it's from The New Moosewood Cookbook, but instead of frying the falafel patties in a skillet, I baked them in the oven. It makes them a little healthier because I can skip all the oil involved in frying, but in truth, I really just baked them because I am TERRIBLE at pan frying anything and always manage to mess it up! :)

I served them in pita bread with baby spinach and plain yogurt - I think DR ate his plain, though. They worked well reheated the next day, too.
