Yogurt CHEESE?!?!

Berry Yogurt Cheese

Yup. That's the reaction I got from most people this summer when I told them of my plans to strain yogurt in my refrigerator..."Yogurt CHEESE?!?!" In fact, I was telling a teacher about it at work, and one of the preschool kids overheard and declared, "Yogurt cheese? That's yuck."

I realize the concept might sound a little weird to some, and I was skeptical at first...but it's actually really, really good! Kind of like cream cheese, but not quite as sweet, and much fresher tasting. I like to eat it on gingersnaps, which compensates for the lack of sweetness in the yogurt cheese. I'm officially a yogurt cheese convert...I'm anxious to try some other versions this fall. Give it a try - you might become a convert too!

Yogurt cheese is great - it works well in cheesecake too!
